What do you love now that you hated when you were younger?

Without a doubt…

Tomatoes.

When I was a little girl, I spent a summer with my Great-Aunt Annie in Maitland, Florida.

Every single day, with every meal, there were sliced tomatoes on my plate.

And there was one rule:

You couldn’t drink your Kool-Aid or your soft drink until you ate every last bite.

Let’s just say… I wasn’t a fan.

I would have rather eaten almost anything else.

Even as an adult, I didn’t mind tomatoes hidden in spaghetti sauce or chili, but if they showed up on a sandwich, I’d immediately ask for them to be removed.

Then somewhere along the way… my taste buds changed.

Now?

I love fresh tomatoes.

On sandwiches.
In salads.
With a little salt and pepper.
Even straight from the garden.

Funny how life works.

Sometimes the very things we resist the most become the things we appreciate later.

Maybe maturity doesn’t just change our perspective on people…

Maybe it changes our palate too.

And every time I enjoy a tomato, I smile and think about Aunt Annie. She may have been right all along.
